Years ago, I taught my oldest daughter how to cook and assigned her to make our family’s supper one night per week. Just cooking the meal wasn’t enough though – she also had to make sure we had the ingredients (by looking at the recipe in advance and adding anything we didn’t have on hand to our store list) and cleaning up after the meal. She has really developed a love for the kitchen and for cooking. Nowadays, she pretty much takes charge of our family’s menu planning and creating our store list. On mornings when she has to head to work, she hands me the recipe for that night’s supper. This morning, she handed me a recipe for Unstuffed Peppers. I saw olive oil on the ingredients list and knew it was the perfect time to test out my Pompeian Extra Virgin Olive Oil.
So I gathered my ingredients and set to work:
- 1 c. uncooked instant rice
- 1 lb. ground beef
- 2 medium green peppers, cut into 1-inch pieces (I cut mine smaller)
- 1/2 c. chopped onion
- 1 jar (26 oz.) marinara sauce
- 1 1/2 tsp. salt-free seasoning blend
- 1/2 c. shredded Italian cheese blend (I just threw in some mozzarella and some parmesan)
- 1/2 c. seasoned bread crumbs
- 1 T. olive oil
I cooked the rice. I browned the beef with the peppers and onions. Then, I mixed the rice into the meat mixture and added the sauce and seasoning. I stirred in the cheese, and put it in a 7×11″ baking dish. I tossed the bread crumbs with the oil and spread them over the top. It only took about 15 minutes in a 325 degree oven and supper was ready!
It was simple and delicious. But, I wanted to put that oil to the test just a bit more. So, I looked on the Pompeian website and found a recipe for Absolutely Outstanding Pound Cake. I had all the ingredients on hand and thought it would make a nice dessert. However, I was a bit skeptical. I mean, pound cake — it’s supposed to take a pound of this and a pound of that, right? Including butter! This recipe called for a cup of olive oil. But, I went for it.
My husband took a bit and said “this is really good cake!” To me, it was the perfect texture and I loved the crusty bites. The center had a hint of a lemony flavor to me – I have no clue why. But, it was really yummy. I was impressed. (And see how nicely it came out of the pan? I was excited! Maybe I can be the next great baker after all. Probably not. But still . . . )
I’m pleased with the results. But the real taste-testers around here are my family members. If they like supper (or dessert, as the case may be), then I know it’s a hit. I’ve got some picky eaters at my house. They don’t like to try new things.
I’ve really enjoyed experimenting with my Pompeian Extra Virgin Olive Oil and I’m looking for something to try next. I’ve been eyeing up the Balsamic Honey Vinaigrette Dressing and I think I might try the Broccoli and Ricotta Pizza one of these days as well.
