I don’t know about you, but here in our homeschooling household, we often get stuck in a (major) rut when it comes to lunchtime. Sometimes I feel like my kids only eat grilled cheese, chicken nuggets, or mac & cheese (from a box). And that’s only on the good days. Other days, when we don’t feel like heating up the oven or using the stove, we have things like cold cuts, leftovers (think: microwave), or cereal. Yes, we do. There, I’ve confessed.
You know, it’s kinda funny . . . but, Ashley and I have this “thing” where we get almost giddy when we’re almost out of groceries. It’s during those times when we put on our creative thinking caps and try to come up with new recipes. So, the other week, right before we left for vacation and the rations were getting low, and I had no clue what I was going to prepare for the kids for lunch . . .
I went out to the freezer.
I saw a pack of bacon and knew that Gracie would like ANYTHING that I created with bacon.
Then I saw the waffle fries we picked up at Aldi’s. (We hadn’t had them before, but we like all their other fries, so we thought we better try them.)
I knew I had some shredded cheese in the refrigerator.
In just a few minutes, I had whipped up some loaded waffle fries.
My kids quickly declared me the “Best Mom Ever” and we had a lunch to put some restaurants to shame. Yep, I’m cool like that. (FYI: I stocked up on more bacon and waffle fries – I figure I’ll use it as ammunition the next time my kids seem a little disgusted with me. That’s the way I roll!)
